With the Graber process, the natural full flavor and succulence of the tree-ripened olives has been preserved, a rare delicacy has been created.

Graber Olive House was founded in 1894, the historic Graber Olive House is located in a pleasant residential area north of Ontario’s business district minutes from the Ontario International Airport in Southern California.
Upon purchasing land in Ontario in 1892, C.C. (Dad) Graber discovered olives, as cured by the earlier settlers, to be one of the finest food delicacies of California. After stu…dy of their method and further research, C. C. Graber cured several barrels of olives using his own “recipe”. The following season a greater quantity was in demand by friends and neighbors who had eaten from the original barrels. Thus began Ontario’s oldest family owned business.
The Graber Groves are now located in the San Joaquin Valley where growing and harvesting is of primary importance. Olives are allowed to mature on the trees to a cherry red color, denoting full tree-ripeness. During the Fall harvest, pickers return to the trees several times, carefully picking only the tree-ripened fruit. After each day’s picking, in the cool of the evening, the olives are hauled by truck to the Olive House for grading, curing and canning.
At peak production, October-December, the historic Graber Olive House pulsates with activities, welcoming new and returning employees to join the full-time staff. Visitors are offered guided tours of the facilities and may browse leisurely in the two gift shops, featuring gift packages of Graber Olives, fine foods and gifts. A mail order catalog is available by request.
Graber Olives continue to be enjoyed by generations throughout the world.
